The collagen-rich chicken stock is simmered for over 8 hours to bring out the flavor and nutrients of the chicken. By removing the lye frequently, we are able to bring out the flavor while maintaining a refreshing and smooth texture. The thick, cloudy soup has a rich and rich taste, with the umami squeezed out to the very marrow of the bones.
