I visited this Jiro-inspired restaurant located about a minute's walk from Exit 2 of Todaimae Station on the Tokyo Metro Namboku Line. I arrived at 11:30 and was connected to a waiting line of 4 inside. I was seated 5 minutes later. There were 11 customers after me. The restaurant has 10 counter seats with partitions, but it is quite narrow. There are only 2 staff members. This time, I purchased a Ramen for 900 yen from the ticket machine. The bowl arrived 8 minutes later. I ordered garlic and ginger. The soup was delicious with an emulsified pork bone soy sauce. The noodles were thick and curly, with a chewy texture, and the amount was a solid 300g, which was delicious. The toppings were pork fillets, bean sprouts, garlic, and ginger. The garlic and ginger did a great job, and I was able to enjoy it until the end without getting bored. Thank you for the meal.
