Reducing Food Waste
The bean skins are dried and turned into powder, which is then used to finish cooking. We try to avoid wasting as much as possible by using fractions of ingredients used in preparation, such as making dashi from the fish heads and bones that have been prepared and making them into sauces.
Offering Vegan Options
This is a special course meal for not only vegans but also those who want to rest their bodies or enjoy healthy food today. We offer menus tailored to our customers that do not use animal ingredients, including eggs and dairy products.
Environmental Protection Initiatives
All takeaway containers are made of paper products. The plastic bags we provide are also made from environmentally friendly materials. The straws we use in our store are 100% Organic Food straws made from natural materials. We will do everything we can to protect the environment.

"Eroica Japan 2024", a bicycle festival originating from Gaiole in Chianti, Tuscany, will be held from May 11th to 12th. The Eroica Festival "CIAOITALIA" will be held at the Nirayama Historical Theatre. Among the various programs, "Premium Dinner [Chikuriismo]" will be held at the outdoor Restaurants of Climada Toscana for one day only. Please check the website for details!

We will be holding a Maker's Dinner at "Casale del Giglio" in Lazio on Tuesday, May 21st at 7:00pm. Founded in 1968 in Agro Pontino, which has a terroir similar to Bolgheri, the winery quickly became one of Lazio's leading wine producers, and currently produces 23 types of wine, including international and local Lazio varieties. Chef Sato has been featured amongst a distinguished line-up of sommeliers and chefs. We are very grateful for this wonderful opportunity. He talks passionately about his experiences during his training in Tuscany, his feelings when he moved to Tokyo, and more, including "The charm of Sangiovese" and "What is Italian wine?"
