前回臨時休業で行けなかったので訪問。
カウンター席のみ席数わずか8席。
間口も狭い。
カウンターにはメニューなし。
椅子の下にはカゴもなし。
服をかけるハンガーもなし。
店内はご主人の世代と思われるエルトン・ジョンのBGM強め。
男性店主のワンオペで奥さんが給仕。ご主人の口髭が似合う。
ワンタンも肉or海老で、券売機の前で悩む。
ただ、13時過ぎで後客がおらず、焦らず食券を購入。
ミックスワンタンの海老2個・肉2個を選択しました。1180円。
900円の中華そばじゃ寂しいからね。
10分ほどで着丼です。
白だしの上にチャーシュー1枚とワンタン4個、海苔にメンマに白ネギ。
美しい作品のようです。
自家製チャーシュー・メンマ・麺やスープも計算し尽く
エビのプリプリしたすり身が包まれたワンタンは特に絶品で、
日頃、割高に感じるワンタンを注文しておいてよかった～と思える一杯でした。
無化調を追及して手間ひまかければ、結果としてこういう味になるんだろうな、
という味の象徴みたいです。
最後は胡椒を軽く振って味変して完食。
カウンターの台に戻して退店です。
食べている間も、ピークを外して何人かのサラリーマンが入って来たので
やはり名店になっていくんだと思います。
