とにかく何を食べても美味しい。
いわゆるビストロの領域に甘んじない、料理人の心意気に
凄いものを感じました。
肉・魚・野菜といった素材全てに目利きができ、
本来持っている旨さを引き出すという基本的な考え方ができる数少ない料理人であることは確か。
特に素晴らしいのがハーブの使い方。
サラダ・カルパッチョなど、ハーブの効かせ方が絶妙で、
深みのある一皿に仕立ててある。
カルパッチョに至っては、ハーブのみならずビネガーと塩の加減が絶妙で
素材の魚の旨味を損なわず、醬油よりも旨い食べ方というのを体現している。
これ、日本人相手になかなかできることではないと思います。
また、魚のポアレに関しても、皮目の焼き方、火の入れ方、ソースとの組み合わせなど
絶妙すぎて、頬張るしかないといった感じです。
庶民感覚の値段で、一皿一皿客を唸らせる料理を提供できる才能に敬服です。
また、ワインもたっぷりサイズで提供していただけるので、
旨い店で暴飲暴食したい方にはオススメ。
ギャルソンの気の利いたサービスも素敵で、非常に良い時間が過ごせました。
久々に感謝したくなる店と出逢えました。
