国産のあご節（飛魚）を一尾一尾丁寧に、ひと時も目を離さず慎重に焼き上げ、あごの旨味と香ばしさが一番出る状態で醤油に漬けこんでおります。
蔵の町、喜多方の【星醸造】の醤油数種に焼きあごを加え、数日間熟成させたものが当店のあごだし醤油（かえし）です。
焼きあご特有の風味豊かで香ばしくも繊細な味わいが楽しめます。

喜多方ラーメンの特徴といえば中太のちぢれ麺が一般的ですが、当店では特有の製法による水分量の多い【多加水麺】を熟成したものを使用しております。
