予約が取れない有名店。
もちろんすでに満席でお客さんみんなが今か今かと浮き足立ってる。
お通しとてっさ、唐揚げから開始。
唐揚げがあるからとビールから始めたが、やはり最初から辛口冷やでよかった。
ふぐなんて味がないと言うのは素人。
しっかり旨みがあるふぐ刺し。
湯引きもいい味。薬味は自前ということで辛味を抑え気味なのもよい。
てっちりはふぐしゃぶと一緒の鍋で。
まずは骨身を昆布出汁に沈めその旨みでふぐしゃぶ。
しゃぶ・鍋用にポン酢に、てっさのポン酢を足して食すとのこと。SDGsですね。
コラーゲンの塊の皮身(しゃぶしすぎると溶ける)、厚めの切り身、この食べ方は良い。
そして骨身にしゃぶりつく。
ゼラチン質が指に付いてべちゃべちゃ(良い意味で)。
そして締めの雑炊。
ご飯を入れる前に全てが抽出されたスープを試飲。間違いない。
多めのご飯をぶち込み卵で完成。
味変はポン酢で。
最高の締めでした。
