これ程までに美味い江戸前寿司を食べた事があっただろうか。
湯島駅と御徒町駅の間の飲み屋街に昨年OPENした寿し処川。
カウンターとテーブル席のみのこぢんまりとした店内は、OPENしたばかりという事もありとても清潔。
そこで寿司を握る板前の後藤さんが良い仕事をしている。
特筆すべきは平目・甘海老・雲丹！
平目は歯応えが面白い程あり、甘海老は口の中がとろけてしまいそうな程美味い。
そして雲丹はミョウバン不使用なので臭みがなく雲丹本来の旨味を味わう事ができる。
一貫一貫ネタの説明をしてくれるのだが、これがとても丁寧で話が面白く聞き入ってしまう。
終盤に出てくる卵焼きは、まるでカステラのような味わいで甘くて美味しい。
自分へのご褒美としてこれからも通う事になるであろう名店に出会えて私は幸せだ。
