やっと自分が理想とする寿司屋さんを見つけました、全てに真心と誠実さが現れてました、鮨種やシャリの温度、鮨種に施された丁寧な仕事、どの鮨種も最良の素材に最良の熟成具合、しかも夏。
鮪は勝浦の定置網150kg越え、大当たりで夏場の赤身なのに冬場の津軽海峡の本鮪みたいに良質の極きめ細かい脂を感じる、スミイカは5日熟成程のアオリイカと勘違いする程濃厚な甘味と旨味、ねっとり感、そしてバランスのとれたシャリ、赤シャリだけれどコハダにも合う主張しすぎない酢と塩の効かせ方、コハダの〆も抜群の塩梅。コハダ、スミイカ、赤身だけで超優良店だと分かります、この日はゆっくり握りと対峙するため遅い時間一人で、握りのみ20貫15000円、自分はもしこれが30000円だとしても気持ちよく支払う。それ位丁寧な仕事と真心を感じられました、自分の舌と知識にはそれなりの自信があります、他の17貫も素材、仕事、共に最上級でした。
イカと赤身は追加で注文したのを撮影、他は一秒でも早く食べる為に写真は撮りません。
そういえば一新さん長年ミシュラン1つ星を取得しています、技と心は間違いなく3つ星級ですね、謙虚、寡黙、威厳、親方としての在り方も兼ね備えてます。
