浅草の住宅街にあるフレンチビストロ「Et vous?（エヴ？）」
フランス語で「君は？」という名前のレストラン。
「生きる幸せは食にあり＝“Lifefood”」をコンセプトに、体に必要な栄養素を取り入れられるようメニューが並びます。
「食べて健康（キレイ）になる」そのためにはまず食材が大事だと考え、使用する食材は産地直送で旬の新鮮な野菜を仕入れています。
オーナーシェフパン岡部勝義さん。栃木のホテルでシェフとして勤務た後、こちらへ。
コンセプトと茶道がリンクしていると茶道を学ばれています。「茶事は漢方や薬膳に通じ医食同源につながる」と。
和食器と箸でフランス料理を食べるカジュアルなスタイルで、日本人が作るフレンチを確立させたい、そうです。
友人と浅草散歩してからのランチ。アンティーク調のインテリアが素敵な店内です。
Casual コース。
前菜はスープまたはパスタから選びます。メインは、和牛ほほ肉の赤ワイン煮込み、鶏のロースト、豚肉のロースト、お魚、仔羊のロースト、牛肉のステーキから。
前菜はそれぞれ、メインはふたりとも鶏のロティに。
【前菜盛り合わせ】
「スムージー」
小松菜、ほうれん草、りんご、パインのスムージー。
「グリーンサラダ」
グリーンサラダに、クリーミーなドレッシングで。
「まるごとキャベツのロースト」
大きくカットしたキャベツを200℃で1時間半ローストして、タマリンドとマンゴーチャツネで味付け、豆乳ヨーグルト、白胡麻、フランボワーズビネガーのタヒニソース、デュカを散らして。
「みかん、イカ、トマト、蕪のマリネ」

かぼちゃのほんのりと甘いスープに、ミルクの泡を浮かべて。トーストと、玉葱のまるごとロースト、紫キャベツのマリネを添えて。
【メイン】
「旨味たっぷり地鶏もも肉のロティ」
地鶏は皮目カリっと身はしっとりと仕上げて、エシャロットのソースでさっぱりと。人参、青梗菜、茄子、蜜芋のローストを添えて。
【食後の飲み物】
「アイスコーヒー」
すっきりとしたクリアな味わいで美味。
シェフは、2号店“蜜芋研究所”も手掛け、今日は、谷中へいらしてご不在でしたが、頼もしい２人の女性シェフが調理と接客をテキパキとこなしていらっしゃいました。
2011年の震災時、自分が何もできないと感じ、自分でできることを追求するために東京での出店を決め、栃木から電車で東京に来るときは浅草が入り口だったことと、日本らしさを感じる地名にこだわり、浅草の花川戸を選んだそうです。
