ChefOwner Chef Kentaro Fujii
After gaining seven years of experience at Michelin-starred Restaurants across Italy, including ``All'Enoteca'' in Piedmont, ``Schöneck'' in Alto Adige, and ``Antica Osteriada Cera'' in Veneto, he returned to Japan. After working at Restaurants in Azabujuban for 6 years and at Hotel Chinzanso Tokyo for 3 and a half years, he opened ``Sognando'' independently in November 2022.
