A dish made using kelp and bonito flakes as the base. We choose what to make from the seasonal ingredients we purchase every day, and use a cooking method that brings out the flavor of the ingredients. We listen to the voices of our customers through daily conversations and provide them with drinks that go well with them. It is an unconventional dish that combines the essence of Chinese and French cuisine cuisine with the orthodox Japanese Japanese-style meal typical of a Japanese Cuisine restaurant. Chef Hayato Sato was born in 1995. After graduating from culinary school, he started working at Japanese Cuisine in Roppongi. After training at Japanese-style meal restaurants in Kagurazaka and Ginza, he became the head chef of a restaurant in Kyobashi at the age of 23. We opened [Mokudori] in 2021. Focusing on Japanese-style meal, we flexibly provide dishes that go well with alcohol. We will express a new form of Japanese cuisine using a variety of Japanese, Western, and Chinese cooking methods. We pair Japanese sake and natural wine carefully selected by the owner with carefully prepared dishes made from seasonal ingredients.
