拘りの焼鳥を出す店があるというので訪問。
錦糸町ダービー通りにある小さなお店。
鶏は千葉県の総州古白鶏を使用しているという。
絶対の自信があるという鶏刺しは日によって鶏が違うそう。

まずは鶏刺しで一杯。3種盛りでした。
もも肉 鹿児島県産若軍鶏
ささみ 鳥取県産大山鶏
白レバー 千葉県産古白鶏
炭火で丁寧に炙ったもも肉と白レバー。
まったく臭みなし。肉は甘みまで感じられます。
これまで先客なしで余裕の状態で料理を提供していた店主ですが、
その後6人の客が来るととたんに大忙し。
焼鳥を焼きながら一品料理を作ってドリンクも用意しなければけません。
どうしても焼鳥の焼き方が雑になってしまうんですね。
肝心の焼鳥は大きさ普通。価格も普通。
炭火で焼き上げたそれは焼きムラあり。
せっかくの古白鶏が台無しという状況に陥っていました。
もったいないですね。
