のどぐろが美味しいことで有名なこちらのお店ですが、
のどぐろだけではなく、鮪や雲丹なども絶品なのです！

芋焼酎！滅多に飲まない芋焼酎なのですが、これは驚きの美味しさ。
フルーティーでいて、甘くない。

もろみ味噌、柚子味噌、生姜醤油で。
水分をたっぷりと蓄えたお野菜の甘みが美味しい♪

まずは生でいただき、
その後、バーナーで炙って戴きました。
少し塩を付けていただくと更に甘みが増して美味！
●のどぐろ原始焼き
これが絶品ののどぐろ！
600ｇ位の大きなのどぐろは目を見張るもの。
1階ではのどぐろを焼く「原始焼き」が見られるのですが、
一本ずつ口を下にし、火入れの様子を見ながら焼き位置を判断することで
余分な水分を落とし、旨味をギュッと閉じ込めた焼き方になそうです。
皮がパリッと！身はジューシーに。
最高の美味しさです。
