The owner, who has a deep knowledge of local sake from all over Japan, carefully selects sake that is at its best before serving it. We also have a wide selection of this season's sake, including brands that are hard to obtain. The vintage sake that the owner ages in his hometown of Yatsugatake, Shinshu, is a refined masterpiece that only a owner who knows local sake inside and out can offer. It is no exaggeration to say that this rare sake, woven together with the passage of time and the owner's sensibility, will change the concept of sake. We serve sake in horse-riding cups, which were used by Sengoku samurai when they decided to go out on horseback. Please enjoy a special cup that also has a nice atmosphere.

We offer a "Choi drinking and snacks coordination" consisting of one soup and four dishes that can be enjoyed casually by first-time visitors and those new to sake. The owner carefully selects seasonal natural ingredients such as fresh vegetables and wild mountain vegetables grown and harvested in the Yatsugatake Mountains. The owner was born in Nagano Prefecture in 1956. While working as a knit designer and stylist, he was attracted to the charm of local sake while traveling around the country for work, and began to forge connections with breweries in various regions. Deepening his passion and knowledge of sake, he opened a members-only bar in Ebisu in 2005, captivating sake connoisseurs with his own aged sake and carefully selected snacks. In November 2023, he opened Sake Kappo & BAR Shu in Tsukiji, renovating the bar to a style that can be enjoyed by a wide range of guests.
