Our chef studied under a chef who trained for three years in Seville in southern Spain, and is full of love for Spain. We are always conscious of local materials and techniques, as well as seasonal trends that can only be experienced in Japan. Most of the dishes served at our restaurant are homemade. Prosciutto "Ibérico de Bellota" used in our store is regulated by the highest quality standards in Spain. These rules are very strict, and there are many rules that are unique to Iberian pigs, such as how they gain weight, how long they are grazed, and that they eat acorns as their staple food, which is the origin of their name.
