久しぶりのシャテールが今年の初フレンチです。毎回、道に迷いそうになる。通常ならこんな場所にフレンチがあるなんて気づかない場所ですよね。一日２組限定のお店。しかも完全個室です。
前菜はフォワグラ。火を通しているそうですが、生のようなマリネ。白ワインと絶妙の組み合わせ。下のカブも丁寧な仕事がしてあり、これはおいしい。
伊勢海老のビスクは、こちらのお店にしては塩味を利かせた強めの味わい。個人的には非常に好みです。こちらもワインとの相性が抜群です。
あんこうをフレンチで食べたの初めてかな。独特の食感が心地よい。ソースも流石の出来。
松坂牛のテールパイ包み焼きも唸る味わい。付け合わせ含め完成度が高い。
こちらのお料理はクラシカルで一見、特徴がないと思われるかもしれません。でも、あえて手の込んだ演出をしないというか、シンプルな中に繊細なつくり込みをしているのだと感じます。バターの使用は抑えていて、コースを食べるとおなか一杯ではあるのですが、軽快な食後感があり「まだ食べたい」と思わせる。ワインとの相性を考えた組み立ても素晴らしい。同じ価格帯のフレンチと比べても、かなり上のレベルだと思います。
一軒家フレンチとしては老舗で、意外にも３０年以上の歴史がある。シェフは６０代後半とのことですが、末永く楽しませていただければ幸甚です。
