This time we're going to a three-star French cuisine in Kitashinagawa! When the restaurant opened in 2006, chef Shuzo Kishida became the youngest person to receive three Michelin stars. He also became famous for supervising the cuisine in the TBS drama "Grand Maison Tokyo." Before the meal, there is no menu, as the restaurant is served a famous blank menu and only an selection course is served. Photography is prohibited except in private rooms, so the menu is as far as I can remember. Wines are paired to match the dishes. Amuse-bouche: Sable with Cow tongue tongue tartare. Red sea bream soup. Koshiabura also contains koshiabura, giving a sense of the season. Goat's milk bavarois. The restaurant's specialty is goat's milk bavarois with olive oil and salt. Lily root and macadamia nuts are placed on top of the bavarois. White asparagus. Firefly squid is placed on top. Butterbur shoot cake salé. Crab meat and crab miso are placed on top. Puntarella fritters. Puntarella is an Italian vegetable. Topped with Asiatic black bear ragu sauce. Pan-fried red sea bream. Garnished with Kaga lotus root. Roasted duck. The garnish was the Awakening of the Inca. ● Green apple sorbet. The pie crust and cinnamon foam gave it the image of an apple pie. ● Strawberry sponge cake. Half a strawberry topped with sponge and whipped cream. ● Warm mugwort tart. ● Meringue ice cream. This was also one of the specialties. Powdered baked meringue was used to make ice cream. Seawater was sprayed on the surface to add saltiness. All the dishes were delicious and very satisfying. The wine pairings were particularly wonderful. It was a very good experience.
