叶え家は、東京都大田区のJR蒲田駅西口のくいだおれ横丁のビルの2階にお店を構えている。
2024年2月5日(月)に叶え家を飲み会で訪れた。
海鮮料理や馬刺しが名物の人気店である。
お店の造りはカウンター席、テーブル席、半個室などがある。
訪れた時の客層は男性が多めであった。
店内ではJ-POPが流れていてテレビがつけられていた。
カウンター席に着くとおしぼりが用意されていた。
お店の人のにこやかで丁寧な接客も良い。
叶え家ハイボールで乾杯をした。
ほのかな甘味があってスッキリとして爽快である。
お通しは魚の骨を揚げたものであった。
パリパリとして香ばしい。
クリームチーズ燻製醤油漬けは、ねっとりとしてクリーミーな味わいで燻製の香ばしい香りが良い。
ガツキムチは、ガツのコリコリとした食感が良く、ピリッとした辛味が食欲を増させる。
叶え家3点盛りは、馬刺し赤身、軍鶏、マグロである。
馬刺し赤身はニンニク、軍鶏は芽ねぎと柚子胡椒、マグロは山葵が添えられている。
馬刺し赤身はしっとりとして味わいがあり、軍鶏は皮の焦げ目が香ばしく、噛み締めるほどに味わいがあり、マグロはしっとりとしてフレッシュなのがわかる。
こぼれ寿司は、かっぱ巻きにたっぷりと雲丹、イクラ、ネギトロ、刺身が盛られている。
雲丹の甘味やイクラのプチプチと弾ける食感、ネギトロのねっとりとした食感も良い。
刺身などのネタが新鮮であることがわかる。
様々な海鮮が口の中で混ざり合いながら、かっぱ巻きの胡瓜のシャキシャキとした食感と塩梅がアクセントになる。
馬刺し3種盛りは、赤身、コウネ、霜降りである。
赤身はニンニク、コウネは山葵、霜降りは生姜が添えられている。
赤身はしっとりとしてお肉が新鮮なのがわかり、コウネはコリコリとして噛み締めると口いっぱいに旨味が広がる。
霜降りは口の中でトロけるようであり、旨味と味わいがたっぷりである。
デザートは、フォンダンショコラ&バニラアイスにした。
フォンダンショコラは温かく中から濃厚なチョコレートがとろ〜りと出てくる。
ねっとりとして甘味が効いていて、バニラアイスの冷んやりとした食感とのハーモニーが良い。
