In order to bring out the flavor, aroma, and texture of pork, we use different cooking methods for each cut of pork. Fillet cutlets are deep-fried at a low temperature, so that the meat is cooked evenly throughout and becomes tender, with a cherry-red cross section and a white coating. The loin cutlet is fried to bring out the richness and sweetness of the fatty meat, and to create a crispy texture without making it heavy.
