目黒は権之助坂の合流地点あたりにある「fours（フー）」私の大好きなビストロ「大衆ビストロジル（JILL）」から独立して開業したお店だと聞いてお邪魔しました。
店内はレンガ調の壁面で明るくカジュアルな雰囲気。厨房を取り囲むカウンター席にテーブルがいくつかで、トータルでは30席弱といったところでしょう。スタッフはみな笑顔で楽しそうに働いており、バイト先としても実に魅力的です。
「焼きとうもろこしのムース」が想像以上に豪華で、燻製したホタテやイクラがモリモリ敷き詰められています。むっちりあまーい香りが漂うのはヴァニラも使っているのかなあ。この料理は客単価5万円のグランメゾンで供される料理をは遥かに凌駕する味わいであり、必食のひと品です。
鶏レバーのコンフィ。一見ナマっぽく見えますが、低温調理で火を通したのちに冷やしています。こちらもバリ高い焼鳥屋のレバーのようにやんごとない味わいであり、ワインにピッタリな味わいです。
サラダには砂肝のコンフィにベーコン、キノコがたっぷりとトッピングされており、仕上げに削ったチーズをこれでもかと振りかけます。具材はソテーしたばかりでホカホカと湯気が立っており、もはやサラダというよりもオカズに近い代物です。
スペシャリテの「大人のわさビーフ」。和牛のローストビーフ（？）を薄切りして並べた上に、わさび菜を山ほど盛りつけます。なるほど程よい辛味と牛の脂が調和して、単刀直入に美味しいと呼べる代物です。
〆は土鍋ご飯。イカ、アユ、アナゴの3種類の用意があり、我々はイカを選択、イカだけでなくアスパラガスやキノコ類も併せてバターでソテーされており、やはり客単価5万円の日本料理店で供される〆のお食事に比肩する美味しさです。
加えて、アサリなどを用いたお出しでお茶漬けも如何？との提案に乗っかりました。この店は何料理屋なんだろう。日本人の琴線を捉えている。刮目すべき成功を収めている理由がよくわかりました。
以上を食べ、それなりに飲んでひとりあたり7-8千円ほど。「大衆ビストロジル（JILL）」と同様に素晴らしい食後感であり、近所にあれば毎日でも通いたいほどです。オススメ！
