This is a project where Chef Oyamauchi will pair unknown home cooking and country cuisine from various regions of China with Tada as the sake keeper. When I received the invitation, I immediately made a reservation. The food here is simply amazing. Using fermented seasonings with herbs and spices, they bring out one dish after another that I have never tried before. I was particularly surprised by the fermented corn and salted fish innards. It was a course full of great excitement. The sake paired by Tada was served with an exquisite seasoning. The appetizer started with a fruity flower-like flavor. From there, more than half of the sake was something I had never tried before. The roundness, sweetness, and richness of the sake were beautifully connected to the unique dishes at various temperatures, mainly warmed. The melon roe rice was paired with Masato's Charyoku, which uses green tea, and the fish roe fried noodles were finished with Shinkame no Hikoma. This time, it was a valuable experience and a very informative meeting. If there is a next time, I would like to participate as much as possible.
