The dough, which is left to rest for 30 hours in a cypress rack, is a unique blend of several types of flour. The dough is aged to become fluffy and chewy, then baked in a custom-made wood-fired oven by Yamamiya Kamado Kogyo for 55 to 70 seconds at a high temperature of over 500 degrees Celsius. The pizzas are prepared with tomato and cheese bases, and the ingredients are carefully selected, such as tomato sauce made from Italian tomatoes seasoned only with salt and buffalo mozzarella flown in three times a week. There are also plenty of toppings.
