Chef Shingo Narimatsu is from Kanagawa Prefecture. I was so happy that people enjoyed my cooking when I was working part-time that I decided to pursue a career in cooking. After serving as sous chef at Hotel New Otani and Ginza Les Anges, he moved to France to study under Jacques Sibois of Grasse Bastide Saint-Antoine (one star). After returning to Japan, he became the sous chef at Omotesando Bamboo, then the sous chef at Ginza La Tour after it opened, and then the head chef at Kagurazaka La Tour.
