五反田桜田通りにあるビストロカフェ「ル カフェ パフューム（Les Cafe’ Perfumes）」。
2013年にオープンしたフランス料理「レストランパフューム」に本格フレンチの味わいをリーズナブルに、と併設されたビストロ。
「パフューム」とは、様々な香りを重ね、その香りが一つになった一瞬をお客様に楽しんでいただくというオーナーシェフの想い。店内は明るくてあたたかい自然光の入る南仏のお家を思わせる雰囲気です。
シェフ成松さんは主にホテルニューオータニ、ラ・マーレ・ド・チャヤ、銀座レザンジュ、渡仏 ジャックシポワ、ベージュ アラン デュカス東京から、伝説の名店・銀座ラトゥール、神楽坂ラトゥーエル 料理長などの華麗なご経歴。
以前、こちらのレストランで美味しかったことを思い出して今回はビストロを訪問。
ランチメニュー～
☆カジュアルランチ・オードブル（4種から選択）、メイン（本日のパスタ、魚料理、仏産カモ肉のロースト(+)、NZ産仔羊肉のロースト(+)等。豪州産牛肉ステーキ等）・自家製パン・サラダ・スープ・デザート・飲み物付。
☆ワンプレートランチ・メイン料理（カジュアルランチと同じ）、自家製パン・サラダ・スープ・デザート・コーヒー又は紅茶付。
☆サンドイッチランチ（クロックムッシュ、サーモンとクリームチーズ、ブルターニュ風パテ）サラダ・スープ・デザート・飲み物付。
☆季節のカレーライスランチ・サラダ・デザート・飲み物付。
私は、以前いただいて感動した“蒸し鶏の低温ローストとモッツアレラチーズの重ね焼き”をお願いしました。あ、今日は「鴨のコンフィ」もあったのね。また来なきゃ。
【サラダ】
「サラダ」
レタスやトレビスにほど良い酸味のオイルドレッシングが掛かっています。何気ないサラダですが、新鮮なのでみずみずしく、美味しかった。
【スープ】
「ミネストローネ」
じっくり煮込んで溶け出した素材本来の甘さとトマトとの深い味わい。食べるスープの感覚。
【パン】
『自家製ミルクパン』
きめ細やかで、もっちり。ミルクの香りにほのかな甘い味。自家製ミルクパンは、フランス産の風味豊かな小麦粉を使用して毎日焼きあげるそうです。
【メイン】
『蒸し鶏のロースト厚切りモッツアレラチーズ』
トローリ溶けた厚切りモッツアレラチーズをのせた鶏のむね肉のヴァプール、仕上げにオニオンソース。とっても柔らかくて、じんわりとした旨味繊細な舌触り。濃厚にして芳醇なチーズがあっさりとした鶏肉の美味しさを引き立てる一皿。尋常でないボリュームが、逆に私の食欲を湧き立てる。
付け合せは、味の濃い小松菜ソテーとヤングコーン、姫大根、カブ、かぼちゃ、それに櫛切りのフライドポテト大量。
蒸し鶏のローストというだけでも、シンプルだからこそ料理人の腕の差が出ます。
【デセール】
「プリン」
比較的堅めで卵の風味はしっかり濃厚感はありますが、甘さはそれほどではなく、抑えめ。
レストランのデセールというよりは、まさにケーキ屋さんのもの。器入り、でいうのはもったいない感じ。ひっくり返すと綺麗に違いない。
【食後の飲み物】
「紅茶」
小さいけど、カジュアルで雰囲気よいお店です。皆さんに丁寧な対応をしていただきました。
ただ、空調のためか、扉があけっぱだったので、冷蔵庫の中にいるかのように寒かった。
お料理のチーズも固まってしまったわ。このご時世だから、良くあることだけれど仕方ないのかな。ただ、このデザートが300円で販売されているので正味1000円でフルセットというミラクルなプライスは凄いと思う。こんどは全身べたべたとホカロン貼って来よう。
