ChefA new French cuisine created by an independent chef from the 1-star Ebisu Mona Lisa
After working as a sous chef at the 1 Michelin star Restaurants Mona Lisa in Ebisu, he moved to France and trained at 2 star restaurants such as Grand Véfour, Neo Bistro, and Le Perte Cartouche. Afterwards, he returned to Mona Lisa and worked as a chef. Incorporating his own modern essence into French classic cuisine that leverages his local experience, he creates new, approachable dishes using Japanese-style meal ingredients, focusing on lightness, portion, balance, and aroma, while still having a strong taste. We aim for classic French cuisine.
