天婦羅 みやしろ＠中目黒
中目黒駅から目黒銀座商店街を直進。
店頭で野菜を山ほど売ってるバグった
ファミマの先を左に曲がって左手すぐの立地。
ポツネンと、つげ義春の漫画に出てきそうな
トタン仕立ての一軒家。郵便受けに「みやしろ」の表記のみ。
店内に入ってみればビックリ！
スーパー和モダンなおしゃん空間。
ちなみにこちらは
ミシュラン一つ星を5年連続獲得している
すんごい天婦羅屋さん。
まずはルービーで乾杯からの
先付は低温調理されたかなり大粒な蛤と菜の花のお浸し。
トロンとした蛤出汁の餡が絡まってヤバ旨。
菜の花のほろ苦がさが良いアクセント。
千葉県勝浦産の真鯛にカリカリに揚がった
カシューナッツを和えたお造りの登場。
ねっとりとシコシコ食感の真鯛に
カリカリ香ばしいナッツブーストでお酒がススム君。
いよいよ天婦羅がスターティン！
まずは車海老だが、レア過ぎない揚げ加減で
海老の水分保有率をしっかり保ったサクッとプリッと食感。
甘みもしっかりしていて最高に旨い。
後にお頭のカリカリ揚げも提供していただきビールが瞬殺。
天むすの最上級、海老天海苔巻きは
衣の付け加減がシッカリ目で甘ダレが絶妙にフィット。
酒をハードな麦ロックに変更。笑
アスパラ天は穂先と根元で揚げ温度を変更して提供する拘り。
一つの野菜で旨味や食感の違いに気付かされる
食材を活かした匠のワザ。
姫路の小玉ねぎ天はジュワっと甘くシャッキシャキ。
筍天も朝どれの穂先だけを厳選し下処理無しで揚げた一品。
ホクホクでとうもろこしの様な甘みを感じ
椎茸天は噛めば噛むほど出汁がじゅんじゅわ溢れる旨味爆弾。
天婦羅の定番めごち天もしっとりと上品。
定番と言えばキス天だが
こちらではキスを熟成させて旨味と塩味を引き出してから
揚げる仕様で今まで食べたことの無い旨味に感動。
鰆天とアオリイカ天は半レアでこれまたヤバいやつ。
さらに驚かされたのはシャトーブリアンの天婦羅。
塩漬け胡椒を口に含んでから塩を付けて頂くスタイル。
ギュッと甘い肉汁と胡椒が合わさって完全な酒泥棒。
海苔天と謳って手のひらに出されたのは
揚げた海苔に本鮪、雲丹、キャビア。。。
食べるとビックリ、最後に残る味の印象は海苔！！！
これまたすごっ！
大将は割烹で長年修行したとだけあって
天婦羅の合間に提供される逸品がヤバい。
鮑の肝をグツグツに炊いた肝出汁に
活鮑をしゃぶしゃぶしたあと、
雲丹がドカンと投入されマゼマゼ。
そこに可愛く丸められた米天をINしてリゾットに。。。
って、これキュン死だわ。
旨味が渋滞しすぎて、とりあえず酒で流し込む。笑
白海老にオリジナルキャビアを乗せたやつもやべべ〜。
とろ〜り、プチプチ食感で口内大騒ぎ。
自家製のからすみをすり下ろした
からすみ蕎麦はオカワリしたくなる絶品蕎麦。
近所の蕎麦屋にあったら間違いなくリピート。
〆はお出汁で炊いたカラフルトマトと
どデカかき揚げをマゼマゼした天ばら。
海老やホタテ、アスパラのかき揚げと
甘酸っぱいトマトが混ざって堪らん旨さ。
オオメに炊いて頂いてお土産に
おむすび仕様も素敵なホスピタリティ。
デザートには抹茶も立てていただき
自家製の甘すぎない塩羊羹でパーフェクツ！
