北海道産鯖の瞬間燻製と菊芋のピュレとハーフサイズ¥750は、ガラスの燻製用ドームに鯖と煙が閉じ込められた状態でテーブルに。鯖の旨味が燻製で強烈に凝縮され、薫りが鼻腔に心地よく残る。付け合わせの大根のピクルスは、お酢が強めで、鯖との相性がいい。
広島産牡蠣の冷製オイルコンフィのハーフサイズ¥500は、絶妙な温度での加熱なのか、牡蠣が、生とは異なるぷるんとした食感。
フランス産マグレ鴨ロースト¥2,950は、しっかりしたコシのある弾力、噛むほどに甘い脂の肉汁は、本物の美味しさ。付け合わせのプライド男爵芋は香ばしい。
3皿とも、ワインだけでなく日本酒にも合わせたくなるような素材の美味しさが凝縮したお料理でした。
ラム肉とパクチーのボロネーゼも食べたかったけれど、お腹に余裕がなくなり、また、次回に。
