2019年6月に中目黒にオープンした比較的新しいビストロ。中目黒駅から徒歩3〜4分の所にあり、入り口はガラス張りなので中の様子がうかがえる。店内は1階がカウンター、2階がテーブル席で合わせて25席程。
HINGEは蝶番の意味で、食を通じてつなぎ合わせる存在・場所、がコンセプトだそうです。
料理は単品、コースコースどちらもあり、コースは全部で3種類で、品数が異ります。どのコースもプリフィックスで、いくつかあるメニューから自由に組み合わせができます。メニューによっては追加料理が発生します。

アミューズのカツオのゼリーと豆腐、前菜の豚のテリーヌが特に良かったです。
しっかりカツオの風味が効いたゼリーで豆腐をいただくと、和の食材だけどフレンチっぽさがあり、コース料理への期待が膨らみます。
彩り鮮やかな前菜の豚のテリーヌは、煮こごりのようなゼラチンで固められており、旨味を具材のコリコリした食感が楽しめました。
1階では1〜2人で、2階ではグループで楽しめる用途の広いお店だと思いました。
