炎=炭火、水=出汁を表し、日本料理としての原点ともいえるもの。生産者と料理人が繋いで、継承してきた素晴らしい形をより探究されたいとして屋号に込め、温故創新をコンセプトに掲げます。
場所は中目黒駅より徒歩8分ほど。
目黒川を越えて、駒沢通りのトンネルを抜けた先にある静かなエリア。目の前にある目黒学院はタクシーの際は目印に。
ぼんやりと闇に浮かび上がる立派な木の扉と表札が期待をグッと高め、思わずネクタイをキツくと整えて足を踏み入れます。
この日の貸し切りは6名のみと極めて贅沢なスペースが取られるカウンター。関節照明に凛とした情景をつくりだすように引き締まった印象を与える和空間。
手元がしっかりと明るく映えて、白木の一枚板のさらっとした質感に思わず胸が踊る。
この凛とした素晴らしい舞台で腕を振るうのはオーナーシェフの伊藤 龍亮氏。
ミシュラン三つ星に輝く日本料理の名店「龍吟」で腕を磨き、2020年に中目黒にこの「炎水」を構えられました。
日本の自然の豊かさを五感に響かせるように、巧みな技術でヒトサラに和の精神やイズムを表現されます。
6名のゲストが揃ったところで一斉スタートとなりました。

奥深い出汁の旨味が創り上げる日本料理の真髄に触れられたかのような心地よさへ酔いしれるひととき。
コースの始まりを告げるように削られる一本の本枯本節。
その直線的な断面は今まで目にすることのない綺麗な一枚となり、エアリー且つ放たれる香りの力強さ。
削りたてをテイスティングさせて頂きましたが、抵抗なく舌に馴染んでいき、そして優しく味を広げ、旨味がグッと顔を出す。衝撃のおいしさは2018ビンテージ昆布。
お次はお出汁のみをテイスティング。
口に含んで感じるクリアでコク深い旨味、込み上げる風味との均衡が保たれて厚みをも感じさせる特別な旨さに!
このお出汁を随所に用いることで、見事なまでに一品の完成度を上げていく。
ぐじの存在感をグッと高めるお椀、鮑の香りに満ちた炊合せも素晴らしい味へと導く。
炭火で焼かれたすっぽん、山椒の香りを纏わせ鰻風味に焼かれると、見事なまでに旨さを爆発させる。
お食事としてメニューに記載のなかったのが"のざき牛のフィレ肉"、レアな火入れに炭火の香りを綺麗に乗せた極上の一口。
一つ、車海老の透明感に素晴らしい食感、名古屋で頂いたレアな車海老の握りを思い出させる極上のおいしさ。
自宅でも使っている岐阜のお米の品種"はつしも"は、大きな粒を活かすようにふっくらとエアリーに南部鉄器で炊かれると、自然の恵みに溢れる一膳目。
二膳目は先ほどの削りたて本枯本節に卵黄を乗せて贅沢すぎるTKGに。
最後は薄造りの完熟いちごの甘酸っぱさを牛乳プリンの甘みに響かせる最高の口直し。

Ensui stands quietly in a calm area of Nakameguro. This was our second private meeting with our followers after last May. In mid-January, when the freezing north wind is blowing, the end of the first rotation seems to be a little delayed, and as I look at the magnificent nameplate, I can't help but feel anxious as I look forward to it. When I heard the call, I was asked to take my coat, straightened my tie, and headed inside. A counter with luxurious space for six selected guests. Grilled milt floating in white miso to resemble ozoni. If you add blowfish soup stock, it will instantly capture your heart and make you feel warm. The main attractions of the day were two giant towers: a natural tiger puffer fish weighing over 5km and a Matsuba crab from Oki. Because the tiger blowfish is prepared in-house, we are able to offer a wide variety of parts and how to pair them with soup stock. While delivering a stable taste of tessani red bean liver and pufferfish skin with ponzu sauce, you will fall in love with the deep-fried chicken, which is made with spices that pay attention to the details of the batter. The plump and chewy flesh of grilled pufferfish, which you can only taste at a pufferfish specialty store, the clear yet sticky umami soup, and even the "toutumi" make this an item that colors the season. After enjoying the blowfish, what was waiting for me was a splendid Matsuba crab from Oki with a tag. Crab shabu hotpot has a sweetness and aroma that is clearly transmitted through the fibers of the crab, and when you mix the miso with the claw meat, it explodes with delicious flavor! The meal is complete with crab rice and blowfish porridge. When you pair the fragrant crab body with steamed rice cooked in kelp soup, you'll be captivated by the aroma and deliciousness that subtly stands out from the meat! The rice made with fugu stock and the egg mixed with fugu stock create a beautiful combination, and the ponzu sauce gives it a light and firm taste. We ate all the seasonal ingredients perfectly, leaving no one left behind. The setting of a private party brings out what Mr. Ito wants to do, and the service spirit that pleases the diners makes for a wonderful hidden menu. The aroma of the soup stock and the flavor of roasted sesame seeds will stimulate your five senses, and the high-quality space and generous and attentive service provided by the staff will make you feel at home. Therefore, it has become a masterpiece that makes you feel that the cost performance far exceeds the price!
