祐天寺にある超人気のラーメン屋さん。
記帳制から予約制になったので、かなり楽になった。
注文したのは醤油の特製ラーメン。
提供されたラーメンを見ると相当綺麗なビジュアル。丁寧に作り込まれているのがよく分かる。
スープを一口啜るとびっくり。全く雑味のない鶏から抽出された旨みが何層にもなって押し寄せてくる。かどの取れた優しい醤油と相まって、今までに飲んだことがないような美味さ。
ストレート麺は小麦の味をしっかり感じつつ、スープとの相性も抜群。
トッピング類はもうすごいとしか言いようがない。
プリプリのワンタンは皮はツルツルでスープをよく吸い込んでくれるし、4種類のチャーシューはそれぞれしっかり作り込まれ、味わいも違うのでとにかく飽きることなくいただける。
また、エノキを揚げたものが良いアクセントを加えてくれ、変化も楽しめる。
これほどまでに完成されたラーメンはただただびっくり。
店主と店員さんのやり取りの中でピリッとした部分があったので、それは見えないところでやって欲しかった。
