中目黒高架下、祐天寺方面に結構歩いたところにあるローストポーク専門のレストラン。中目黒の駅近くと比べて人通りは大分少ないが、店に入ると13時回った頃合いながら結構混んでるのでびっくり。やはり人気店なので多少遠くてもコンスタントにお客の入りがあるのだろう。
本日はぼっちランチにつき、カウンターに案内される。注文は卓上のQRコード読み取って、出てきたメニューから選んでオーダーするシステム。ローストポークは大きさに応じて山の名前が振られており、自分は最小の日和山（ひよりやま。仙台市内。国土交通省により日本最低山に認定。）とレギュラーセット（スープライス付）1290円也を注文。
しばらくして注文の品が届く。表面はカリカリに焼けていて、とても良い焼き加減。付け合わせにマッシュポテトとクリームスピナッチ、小さな器にソースが入ってる。
早速ナイフを入れてみると、存外柔らかくてスルスルナイフが入る。ローストビーフみたく低めの温度でじっくり焼いたのだろうか、肉の中は結構赤い。
まずは一口。信じがたいことに豚肉はとても柔らかく、脂身と赤身の区別が付かないくらい。噛めば噛むほど肉汁と脂が出てきて大変美味。ステーキソースっぽい甘辛のソースも余り主張しすぎない味で肉と大変良く合っている。
なんでこんなに美味くできるのか、我が家でいつも使用している肉のハナマサの豚肩ロース塊グラム98円也と何が違うのか、ローストポークという概念がゲシュタルト崩壊起こすほどの衝撃的なローストポーク。流石は専門店のプロの仕事だと感服すること頻りであった。
なお、肉は基本のソースのほか、卓上の岩塩、黒胡椒、柚子胡椒、牡蠣醬油、わさびで自由に味変できるシステムだとのこと。折角なので色々試してみたが、個人的にはローストポークの半生の上質のたたき肉みたいな味と質感に、牡蠣醬油とわさびの組み合わせが最も合っている気がした。
歳をとったせいか、肉200gで十分お腹いっぱいに。満足して店を辞去。今度は家族を連れてきてびっくりさせてやりたいと思う。
