We use deer meat caught by Mr. Nei, a veteran ``master'' hunter from Nakagawa Village. Because deer meat is properly processed after being killed and stored at the appropriate temperature and humidity, the resulting deer meat is much more delicious than beef sold to the general public. Unlike livestock raised on compound feed from overseas, these are healthy deer that have been raised in the Southern Alps and fed with the blessings of the mountains. It is a high-quality red meat that is surprisingly tender and has no odor, even for those who are reluctant to eat wild game.
