Food Aged noodles made from 100% domestic wheat flour
The thin and beautiful noodles, reminiscent of Japanese soba, are made using the domestically produced Haruyo Koi wheat flour, adding specific ingredients, and carefully making the noodles. Before being served, it is placed in a constant temperature and humidity chamber to slowly mature. The rich flavor of the wheat mixes well with the aged soy sauce soup, enhancing the overall deliciousness of the Chinese soba noodles.
Food Iwate prefecture branded pork “Iwanaka pork”
We use Iwanaka pigs that are raised in a safe, secure, and clean environment and have passed a specific certification system. High quality is maintained not only by the producers but also by the long-established butchers who purchase the carcasses as they are without vacuum packing them. The homemade Iwanaka pork roasted pork is juicy and has an elegant taste.
Food Aged soy sauce made in cedar barrels
Aged soy sauce that takes over three years to make at a brewery in Shodoshima, Kagawa Prefecture. We use large cedar barrels, which are a habitat for lactic acid bacteria and yeast, to create a strong flavor unique to the brewery. By the way, local brewers including our brewery are working hard to make new wooden barrels in order to pass on the wooden barrel culture to the next generation.
