自由が丘駅前にあるワインバル「ペコヴァン」
毎日、通勤でも休みの日でも行きも帰りもこのお店の前を通る私。でもヴァンに関心がない（致命傷ですが）のでスルーしていました。ランチを開始されていました。遠出ができない今日、伺ってみました。
ハナコ情報。オーナーソムリエの松田真美さんの「美味しいシャンパーニュをたくさん飲んでもらいたい」という心意気、2017年にとにかくワインをグラスで楽しんでもらうことにこだわってオープンされました。100種のグラスワインが堪能できるそうです。
ランチは「お得なペコセット」サラダ、選べる前菜2種（９種から選択）、メイン（パスタ2種、リゾット1種から選択）、ドリンク。（前菜抜きも可能。）
今日のパスタはプッタネスカか生姜のペペロンチーノ、リゾはパルミジャーノ。前菜は「ハモのフリット」「フルーツとマスカルポーネ」「美桜鶏のたたき」「鴨のたたき」など、さすがワインのお供にぴったり系が充実。
ワインを売りにするというからには、お料理特に「オードブル」をおろそかにするわけないと確信、前菜マスト。今日も2度目のランチなのにしっかり「パルミジャーノクリームのリゾット」。
【前菜】
「おいしい野菜のサラダ」
マッシュルーム、オクラ、紅芯大根、ニンジン、ラデイッシュ、トレビス、レタス、紫オニオン、白菜、とうもろこし。上からシーザーサラダさながらチーズをこんもりふりかけ、酸味の程よいビネガー系ドレッシングをかけてあります。
【前菜盛り合わせ】
「メカジキのハーブマリネ」
今が旬のメカジキを低温調理でレアめに火を入れてしなやかな食感。たぶんグリルするより旨味が凝縮されて真の味が伝わる効果的な調理法だと思う。ハーブの香り漬けされたマリネなので香りも豊かでさわやか。これすごいうまい、これだけでも来てよかった。
「真蛸のガルシア風」
柔らかく火を通したマダコは、赤酢のマリネのような味付け。真っ赤な燻製パプリカパウダーを上からかけてあります。ほんのりスパイシーでお酒のおつまみとしても最適な一品。ちなみにナイフはラギオール。
【メイン】
「パルミジャーノクリームのリゾット」。
生クリーム、パルミジャーノチーズを入れたクリームリゾット。仕上げに黒胡椒をたっぷりと掛け、香りも豊かでクリームが単調になりません。チーズのコクと旨みが広がりアルデンテなリゾットの食感と共に味わう。量が多かったせいか最後は、なぜか甘みが強く感じられた印象。おいしすぎて味覚が鈍った、壊れたかも。
【ドリンク】
「コーヒー」
若い男性お2人で、接客もお調理もされていました。お二人とも親切で言葉遣いも丁寧ですみずみ気を配っていただきました。メニューに書かれていたお二人の似顔絵がわかりやすくて笑いました。みるみる満席になって、賑わっていました。ネットを見ると、そうとうコロちゃんのダメージを受けたようでしたが、一生懸命さが伝わってきました。
