渋谷にもある「てっぺん」へお邪魔しました。
20年近く前にてっぺんの朝礼に参加したことがあったので、個人的に思い入れがあるお店さんです。
当時、全然違う会社で働いていましたが、てっぺんの朝礼が非常に素晴らしいので勉強してこいと言われお邪魔し、その後てっぺんで食事をさせてもらったことが昨日のことのように思えてくるのはそれだけインパクトがあったと言うことでしょう。
料理の味もこだわりも接客もさることながら、心意気が素晴らしいお店です。
気持ちがあるから、それが料理やサービスに表れる。
それこそ20年前も今も満席になるのはそういうところでしょう。
当時はやってた居酒屋ではなく、現役バリバリ最前線、昔に比べ伝統すら感じさせるようになっているのは完全に進化しているのでしょう。
今回はコースでお料理を頂きましたが、季節感があり、また全体で気に優しい味で切っと冷えた日本酒との相性も非常にいい感じ。
お造りは一つ一つ手が入っており、土鍋の穴子ご飯はそのままでも出汁茶漬けにしても美味としか言いようがない。
前菜は季節感があり、一品として出てきたのはなんとシュウマイ。
ちょっとびっくりしましたが、これがまたおいしい。
てっぺんは頂点であり、ど真ん中でした。
