新しいマンションの地下一階にある鮨光

ぱっと見馴染んでいて、自転車で通過してしまいました。
少し奥まって木を生かしたお寿司屋さんらしいしつらえがありました。
鮨光、お店の名前はお子さんの名前から。
昨年3月オープンで、店内は檜の一枚板８mのカウンターが大きくて８席。
とても綺麗で雰囲気もいい感じ。場所柄お客さんもいい人が多いようです。
ランチは5000円の10貫コースと7500円の12貫コース、10000円の15貫コースの
中から10貫コースをいただきました。
まずは赤烏賊
パツっとして食感重視。
やや硬めに炊かれたシャリは塩穏やかに。
黒むつ挟んで赤身
こちらの鮪はやま幸さんのもの。
下田のもので身はしっとりと。
中トロ
脂の周りよくて、綺麗な色。
この時期のマグロは軽やかで、スッと食べられちゃう。
そして小鰭
軽めな締めですが、鮪の脂をスパッと切る役割。
続いてカマスの昆布締め
脱水して旨みを引き出して。
細魚
かんぬきのサイズを片身づけ。
淡白な味わいの中に旬を感じさせ、丁寧な仕事が生きる。
小柱、白海老、馬糞海胆と続き
玉子焼
ふんわりとカステラタイプ。
ラストは穴子。
濃い味付けをしない沢煮のタイプ。温めて握って、ホワッと柔らかに。
5000円のランチでも手を抜かない締め仕事、煮仕事を味わえる。
意外と寿司店少なく穴場の自由が丘近辺で迷ったら選択肢に入れたいお店だ。
