It was a night in August 2023. It had been a while since I had had a drinking party with my co-workers, so I made a reservation at Okusawa's sushi restaurant, located halfway between our workplaces. After leaving Okusawa Station, it was a short walk towards Jiyugaoka. The shop is located at the back of an alley, but it's in a residential area, so you wouldn't think there was a shop there.You might miss it at night. The owner, who was trained at a long-established restaurant in Ebisu, had a charming smile on his face.He enlivened our conversation and entertained us.The most important thing was the sushi, but the sushi rice was... Red vinegar is used to add depth to the flavor in addition to the saltiness. A little sugar may also be used. The noodles are cooked to a slightly firm consistency, almost al dente. The nigiri is rather small. The toppings start with Haruko sea bream. The tuna used for finishing the dish was a bit small and the texture was a bit less than I would like.
