ChefA talented chef who continues to pursue “his own Italian cuisine”
Born in 1978. After graduating from Ecole Tsuji Tokyo, studied under Mr. Hidaka of [Aqua Pazza]. From 2003, he spent three years training throughout Italy. After returning to Japan, he worked as the head chef at Ristorante Kappas in Minami Aoyama and Ristorante Casina Canamilla in Nakameguro, before opening Il Pregio in Yoyogi Uehara in 2012. Awarded one Michelin star in 2014 and 2015. Won 2019 Gault & Millau 3rd prize.

Chef Iwatsubo's desire is to ``taste the best of himself,'' so even though he is in the minority in Italian cuisine, he limits himself to small, multi-dish courses. Surrender yourself to the sensibilities of a chef who pursues creativity, and a new world will open up to you.
