丁寧に裏ごしされたポタージュのようになめらかな口当たりの鶏白湯スープは
鶏の香りやうま味が濃縮されているにも関わらず鶏の脂特有の癖や臭みが全く感じられない
表面に浮いた白トリュフオイルの香りも華やかで、一口目から目の覚めるような味わい
自家製という細ストレート麺はソフトな食感とかなりある長さが特徴的で、
スープをたっぷり含み持ち上げてくれるスープに寄り添った麺
低温調理されたチャーシューはしっかりと味が染みていて、薄切りながらしっかりとした存在感
黒胡椒のかけられた半熟玉子は後半に崩すことでカルボナーラのような味わいに変化して、
単調にならず最後まで新鮮な気持ちでいただくことができた
ラーメンそのものはもちろん、店内の内装なども含め、洗練された美しさが感じられる一杯でした
行動圏から少し離れてる事もあり気軽に訪れることが難しいのですが、
泡状に仕上げたcremaや醤油ラーメンなどをいただきにまた伺いたいと思います
