◆出色の一皿 アジとマンゴーのテリーヌ
ガツンとした旨みの豚足とリードヴォーのクレピネットも良かったが、
料理のセンスに舌を巻いたのはアジとマンゴーのテリーヌの方か。
鮮やかな蒼の丸皿に四角いテリーヌが乗り
その靄のかかったような桃色のグラデーションのアジと
目を瞠るような橙と黄色の中間色のマンゴーの対比が映える。
アジは
みずみずしくも脂もたっぷり乗ったボリューミーな旨みで、
マンゴーが
トロピカルで完熟のまったりした甘みで呼応し、
その一方、両者の間に忍ばせた生姜のピクルスの
ガリを思わせる甘酸っぱさと
ミントのジュレが爽やかな後口をもたらす。
旨みと甘みの相乗と酸味の押し引きが計算された
実に繊細な一皿だ。
この一皿が象徴するように
古山シェフの料理は
クラシックな力強さ一辺倒ではなく実は細やかでも有って、
その骨太さと繊細さの共存こそ
この店の美点だなと感じた。

恵比寿のル・リオン等で修業し麻布十番の喃喃でシェフを務めた後、
独立を果たした古山幸正シェフのクラシックなビストロ。
妻の久美子さんと二人で切り盛りする。

夜はコースのみ5500円と9000円の2種類。
今回は9000円のコースで。
別途席料が600円かかる。
