かさねせいろ
周りに飲食店どころかコンビニすらないこちらのお店。
Google mapで飲食店を検索すると、この店のポツンと
具合が面白い。完全に住宅街に溶け込んでる。
わざわざ行くか悩むお店だけど、
わざわざ行くべきお店になった。
周辺住民に長年親しまれてきたお店なのだろう。
常連客がメインにみえる。
肝心のお蕎麦は4種類あり、その全てが十割。
かさねせいろは田舎と十割そばの2段重。
十割そばは予想外に喉越しがよく、田舎蕎麦は太くて
歯応えがあり、どちらもつゆに浸けずに食べると蕎麦
の芳醇な香りが鼻に抜けて心地よい。
つゆは塩味も甘みも出汁感もバランス良く調和していて
蕎麦の風味を壊さない絶妙なもの。
山葵も契約農家から取り寄せており、蕎麦にちょいと
付けて啜ると、とても華やかになる。
私のせいろ蕎麦の食べ方の流儀は山葵もネギも七味も蕎麦の端に少し付けてそれからつゆに先だけ浸して一気に啜る。
つゆにそれらを溶いたりはしない。
それぞれの風味をより感じたいから。
刺身と同じかな。。
ともあれ、
この立地にして長く営業されてるのには理由があった。
また来よう。次は何食べよう。
技術の高さに驚きました。
