○ 春キャベツのヴルーテ ホタテと魚介ジュレのカクテル仕立て
春キャベツのヴルーテ （濃いポタージュ）にホタテのタルタルと魚介のジュレ。
トビウオ魚卵の塩漬けのプチプチの食感をアクセントに春の旬の食材を使ったカクテル仕立て。
とても美味しかったです。
○ブランダード オーブンパン粉焼き
（真鱈とジャガイモのグラタン）
珍しい組み合わせのグラタン、濃厚なベシャメルソースがふっくら柔らかい鱈とジャガイモによく絡みます。
これも美味しかったです。
○ホワイトマッシュルームのクレームブリュレ
1番印象に残ったお料理。訪れたらぜひ頼んでいただきたい。
表面をオーガニックシュガーでキャラメリゼ。
この甘みとバター、ホワイトマッシュルームの風味がワインと合います。
バターと卵をたっぷりのブリオッシュを付けて。

ブールマルシャンドヴァン （自家製赤ワインバター添え）
食感豊かで濃厚な味わいの肩ロースを時間をかけてゆっくり火入れしてあるので、本当に柔らかくて風味豊か。
自家製の赤ワインバターと一緒に。
美味しくいただきました。

ベルモットのバターと塩レモンのソース
ベルモット （白ワインリキュール）で仕上げたほのかに苦味あるバターと、酸味と塩味のある塩レモンのソースをアクセントにブリオッシュと共に。

全てのお料理どれも美味しくいただきましたが、特にホワイトマッシュルームのクレームブリュレがおすすめ。
マッシュルームの強い旨みとクリーミーな味わいに、甘くてビターなキャラメリゼをパリッと崩しながらいただきます。
つけあわせのブリオッシュとよく合います。
このお店でまた食べたいと思う一品でした。
