The fresh chicken used at the end of the morning is Kenbidori, a Koshu chicken from Yamanashi Prefecture. It has no odor and has a soft texture. Carefully grilled using Kishu Bincho charcoal. The sauce has been added to the sauce for over 40 years, and although it has concentrated the umami from over the years, it still has a refreshing taste. ``Liver'' made with the rare white liver part is popular. There are also unusual dishes such as ``Tomato Cheese Maki.'' We also recommend other dishes other than skewers, such as ``Toriwasa,'' a fresh dish made with quail eggs in soy sauce and seasonings.
