家族との会食なのでフカヒレ姿煮を2種類食べ比べる事が出来た。
一般的に、アオザメは運動能力が高くヒレの繊維が太くプリプリしているので食感を楽しみたい時、ヨシキリザメはコラーゲンが豊富で旨味を楽しみたい時といわれている。
アオザメは大きいサイズしか無く概ね300gオーバーなので1人では食べる機会が少ない。
今日は両方ともほぼ同サイズで調理法も一緒である。
食べ比べには申し分無い条件だが、私の愚舌では違いが分からなかった。
共に甲乙付け難く美味い。
フカヒレ以外はシェフお任せコースをご馳走になった。
鯛の中国風刺身は鮮度が良く、海老の料理は海老が青色に色付けられていて食べるまでは海老とはわからないサプライズがあった。
このコースで秀逸だったのが釜蒸しスープ。
調味料不使用の食材の旨味だけのスープで塩すら使われていない。食材はフカヒレ、干貝柱、金華ハム、スッポン、牛アキレス腱、、、などで聞いたことも無いキノコや色々なものが使われていて楽しい。食材名は写真参照。
