The eel is harvested from underground water and is prepared every morning by an eel chef, who then carefully grills it over special grade bincho charcoal.
The secret sauce has been passed down from generation to generation for 80 years. Nukadoko is 50 years old. Each eel is carefully grilled by a craftsman using Miyazaki's special grade Bincho charcoal.
... The rice is Koshihikari rice delivered directly from contracted farmer Naganuma Farm in Yamagata. Sansho is a first-class product with a high aroma from the Niyodo River Sansho Enterprise Association, Ochi-machi, Takaoka-gun, Kochi Prefecture.
