鳴物入りで入団の大型ルーキーである。吉祥寺界隈はちょいと沸いている。アムステルダム唯一の和食ミシュラン1つ星⭐︎
"オークラ山里"のかの有名な富川正則氏に師事した彼が、親方の名を冠して、吉祥寺に逆輸入"sushi"を持って帰ってきた。もう情報量が多すぎてパンパンであるが、話題性は凄いから予約は取れない。カウンターにはよく見る界隈のグルマンマダムが並ぶ。
どう評して良いものだろうか、そんなものは必要なくて、相方が言い得て妙に"ディズニーランドより楽しいね"と言った。それで良いのである。若い女性に愉しいと言って貰う為に、オヤジは寿司屋に連れて行く。オヤジはそれで報われるwwそんな場面も多い訳で、評論家然と眉間に皺を寄せて、臨む様なもんじゃない。
そしてオヤジも正直愉しんでいた。全球変化球、ペアリングまで変化球の様な心地がして、7割のストレートを磨きあげてこそ、3割の変化球ってのは活きてくるんだよ。とか、
オープン2ヶ月の新米大将がキャビアをプロデュースだって？？とほざいたりもしたが、オヤジも正直愉しんでいた。
ペアリングコースは相当な酒豪でない限りオススメ出来ない。17:10〜18:40正味1時間半の間に、22品＋αのお料理が出る。写真撮ったり、ツッコミ所満載なお料理の数々に云々言いながら愉しむのである。
ここに酒のペアリング云々までは入る余地がない感がした。HBAのバッチを付けた女史が初々しくプレゼンするが。客の腰が座っておらず、非常にバタバタ感がある。ペアリングの酒は6種くるというが1種1合近く、飲みきれないから、残っていって2種でストップ、ペアリングにはならない。日本酒コースにライスワインを持ってきたりchallengingなのだが、、、
良い寿司屋ってのは、やや張り詰めた凛としたところがあって、長年の魚屋との付き合い、苦心した今日の旬の仕入に季節を感じ、血の滲む努力の上に成る仕事を讃えながら、大将は蘊蓄や、四方山を2〜3言。そんな時代ではないのか。
二番手のお兄ちゃんも元気にペラペラやっていた。それも斬新でアミューズメント性、ショー的要素が面白くもあった。
和食の技法の良いとこどりの様なコースは、インバウンドには大受けしそうだし、また彼はDubaiや Singaporeかどこかへ羽ばたくかもしれない。

小分けの馬糞雲丹は美味かったが、caviarは余計だな。

この辺は良かったなあ。
映える演出や、写真撮影ポイントもたくさん準備し、現代風、世界の"sushi"を見た。
22品+ペアリングコースに、勧めのトロたくを追加したところ、23000円くらいだったか。こうなるとコスパは余り良いとは感じない。20品のコースは12900だというから、これだと非常に買い得感がある。
次回は削ぎ落とし、品数を減らし20品コース、追加も無しだ。酒も控えめで、シンプルなものを持ってきて、出来る限りゆるりとお料理と向き合ってみたい。
若いが実直そうな大将とゆるり話してみたい。彼のプロデュースなのか、絵を描く誰かが居るのか、どこへ向かうのか。興味は尽きない。腹は一杯だが、2軒目、お好みでちょろり摘める寿司屋に行きたくなった。
