鮨店で一番時を過ごすのに気を使いますね。
お味ですが
シャリは赤酢の三種ブレンド。米は三重県と福島のお米をブレンド。固めのシャリですが、温度変化がなくそこは好みですね。
墨烏賊は、さっくり感が良かったです。
産地や仕込みを聞くと丁寧に答えてくれました。
日本酒は15種類程あり、定期で入れ替えをしてるとの事でした。指ふきや、おしぼりの交換もあり、決め細やかなサービスでした。
なかなか集客に苦戦と思いますが、頑張って頂きたいです。
お昼のランチコースと日本酒1.5合で8千円ちょっとでした。鮪は生の本鮪、春ならではの酸味がありました。肴は、はじめに口コミされていた方の内容の方が魅了的かも。握りは、桜鱒や鰯もいいですが貝類が一貫あった方が内容にメリハリがあっていいかもが個人的感想です。
