The pork used is Waton Mochibuta, a brand of pork made from a blend of three types of pork. After parboiling in water, the pork is simmered in kelp and bonito stock to remove excess fat and odor, resulting in a gentle sweetness that is easy to eat. The extremely thick pork cubes are prepared over a 15-18 hour period, weighing in at a hefty 200g. They are so soft they can be cut lengthwise with chopsticks, and are exquisite in their deep flavor. Enjoy this exquisite dish, which has been carefully crafted from the selection of ingredients to the cooking method, to your heart's content.

The two set menus, each with a different volume, consist mainly of a bowl of rice topped with simmered egg and mashed potatoes, with a choice of either the "Pork Kakuni Bowl Set Meal", which features one 200 g piece of pork kakuni, or the more exuberant "Tokujo Pork Kakuni Bowl Set Meal", which features two pieces of pork kakuni. Don't miss the set's oshinko and pork miso soup as well as additional kakuni, boiled egg, and other toppings. Feel free to visit takeaway for a take-out container (50 yen), which is great for when you can't finish your meal.

In addition to free pickled ginger, Japanese mustard, black pepper, and garlic soy sauce, we also offer tartar sauce and soup stock sets, each 300 yen. The original soup stock in the "Soup Stock Set" is a blend of bonito, kelp, and green tea, and goes perfectly with pork belly.
