We use fresh local chicken "Amakusa Daio" which the owner personally goes to the site to purchase. Although it became extinct in the early Showa era, there have been constant calls for its restoration due to its excellent meat quality, and it has been revived for the first time in half a century.It is also known as the ``phantom free-range chicken.'' It tastes delicious whether boiled or grilled, and is characterized by much more flavor than other local chickens. We offer cooking methods that maximize the deliciousness of the ingredients, such as salt-grilled thighs, seared thighs, grilled chicken thighs, and seared gizzards.
